Sustainable and plot-by-plot cultivation. Hand-harvested with successive sorting. Whole-cluster fermentation in temperature-controlled stainless steel tanks using selected yeasts, malolactic fermentation, traditional winemaking. Blending, traditional cork closure, aged on lees for 3 to 4 years before disgorgement.
