Part of the Languedoc region of South Eastern France, the Minervois territory is a vast amphitheatre bordered by the Canal du Midi to the south, the Montagne Noire to the north and extending from Narbonne to Carcassonne. Domaine Baptistes Boutes' Minervois is produced by Jean Paux Rosset of Chateau de la Négly. This displays an integrated suppleness and savoury red fruits and a fair smattering of the dried herb/garrigue flavours.
